valentines day
Monday, February 16th, 2009Wishing everyone a lovely valentine’s day.. I feel it’s been too long since I’ve blogged so I thought I’d put up a little personal post. How did you spend your valentines day? Feel free to comment your answer!

I cooked dinner for my boy saturday night. Roasted vegetable lasagna. I got two thumbs up on this dish. :) I tried a new photoshop technique I discovered thanks to one of my favorite flickr pages – HighlandGhillie.


It was really easy – I just roasted up some veggies: zucchini, red pepper, broccoli, carrots; I was going to add spinach but I forgot. Layered them with noodles and LOTS of mozzarella and ricotta, and baked it at 350 for about an hour. Next time I will put a few more spices (basil, oregano, etc.) in the layering and also try a few different cheese in it too. If you want more details about the recipe feel free to email me. We baked a few chocolate chip cookies for dessert. :)
The next morning I made breakfast the boy and myself. He had boring scrambled eggs and toast but mine is one of my favorites.

It’s poached eggs, (recently discovered how easy those are) steamed spinach, and wheat toast. I drizzled it with a little olive oil this morning and it was AMAZING. Very European.

Awesome! Happy Valentines Day! Myself and my husband, well I was still and I’m still sick but on the recovery. I’ll hopefully post something this week. He installed my curtains we bought from Ikea for Valentines Day, and I took him out for a nice dinner. Sunday we went to Alton to celebrate his grandpa’s 90th birthday. Glad you guys had a good one!
